Cinnamon Apple Stovetop Oats
Ingredients
- 1 cup oats
- 1.5 cups unsweetened almond milk
- 2 teaspoons cinnamon
- 2 teaspoons coconut sugar
- 1/2 teaspoon vanilla
- 1/2 apple, chopped
- 1 teaspoon coconut oil
- 1/4 cup plain kefir
- 1/2 tablespoon peanut butter
- a few chopped pecans
Preparation
Heat 1 cup of oats with 1.5 cups unsweetened almond milk in a pot over medium heat until it starts bubbling, about 5 minutes.
Add 2 teaspoons of cinnamon, 2 teaspoons of coconut sugar, 1/2 teaspoon of vanilla, and a quarter of the chopped apple to the oats, mix well, and cook for 8 minutes over low medium heat.
In a separate pan, heat 1 teaspoon of coconut oil over medium heat, add the remaining quarter of the chopped apple, sprinkle with cinnamon, and cook until the apple is soft.
Divide the cooked oatmeal into bowls, stir in 1/4 cup of plain kefir and 1/2 tablespoon of peanut butter, then top with the cooked apples and a few chopped pecans.
