Pumpkin & Zucchini Fig Muffins

Ingredients

  • pumpkin muffin mix
  • - I used flax eggs instead of eggs
  • - I added 1/2 zucchini, grated - I added 1/2 tbsp coconut butter
  • - I swapped 1/4 of water for almond milk (1 part almond milk and 3 parts water)

Preparation

  1. Once spooked into the pan, I sprinkled pink sea salt, raw pumpkin seeds, and fresh fig on each muffin before baking at 350 for 30 minutes
