Cacao Muffins with Jam

Ingredients

Dry

  • 1.5 cups flour (buckwheat or choice)
  • 1/2 cup cacao powder
  • 1/4 cup coconut sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt

Wet

  • 1/2 cup almond milk
  • 1/2 cup water plus 2 tablespoons additional water
  • 3 tablespoons coconut oil
  • 1 teaspoon vanilla

Preparation

  1. Preheat the oven to 180°C

  2. Mix the dry ingredients together.

  3. Mix the wet ingredients.

  4. Combine the dry and wet mixtures, adding more water or milk little by little if needed to avoid a liquid batter.

  5. Bake in the oven for 15 minutes.

Serving

  1. Once the muffins are cool, top them with jam or cut them horizontally and fill with jam.
