Quick Veggies Stirfry
Ingredients
- 1/2 package of button mushrooms, quartered
- 1/2 frozen edamame
- 5 whole shoshito peppers (any pepper works in place of this)
- 1 head of baby bok choy, cut into strips
- 1 cup roasted broccoli (I roasted some frozen broccoli in my air frier for 8 mins at 370 but feel free to bake in the oven or just throw into the pan to cook instead)
- 1 tbsp soy sauce
- 2 tsp maple syrup or sweetener of choice
- 1/2 tsp garlic powder
- 1 tsp dry basil
- 1/4 tsp ginger powder
- 5 green spring onions, diced
- Salt as desired
Preparation
In a pan, add in mushrooms with a pinch of salt and cook until browned and most of moisture is removed
Add in the whites of the green onion and continue stirring
Add in peppers, bok choy, 1/4 cup of water and the herbs and spices
Allow liquid to cook off as you stir
Add in edamame, soy sauce, and maple syrup then stir to combine allowing edamame to cook all the way through
Once cooked, turn off heat and add in the roasted broccoli and the remaining diced green onion
Stir once more to combine sauce and green onions then serve as desired
