Orange Chickpea Stir-Fry

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 medium orange, cut into wedges for juicing
  • 1/4 large red onion, roughly chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp ginger powder
  • 1/2 tsp Trader Joe’s Umami seasoning (optional)
  • 2 tsp maple syrup
  • 1 tbsp soy sauce
  • Cornstarch slurry (1/2 tsp cornstarch and 1 tbsp water mixed together)
  • Veggies of choice: I went with greens
  • Mushrooms, carrots and brussel sprouts

Preparation

  1. Add mushrooms and onion to cooking pan and allow to cook and release its water

  2. Once cooked, add in chickpeas

  3. Sprinkle all seasonings over mixture and allow to cook for 2 minutes to warm the chickpeas through

  4. Add juice and sauté to evenly coat

  5. To remaining orange sauce, add cornstarch slurry and cook for 2 more minutes to thicken sauce

  6. Add in greens and allow to wilt for a few minutes

  7. Serve with other veggies and whole grains
