Nutritious Bok Choy Stir Fry with Veggies and Rice

Ingredients

  • 1/2 red onion
  • 1/2 cup mushrooms
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon Trader Joe’s Mushroom umami seasoning
  • 1/4 teaspoon ginger powder
  • 2 teaspoons soy sauce
  • baby Bok Choy
  • edamame
  • peas
  • jasmine rice

Preparation

  1. Add 1/2 red onion and 1/2 cup mushrooms to a pan set to low-medium heat.

  2. Cook until onions and mushrooms are cooked down.

  3. Add seasonings: 1/4 teaspoon garlic powder, 1/4 teaspoon Trader Joe’s Mushroom umami seasoning, 1/4 teaspoon ginger powder, and 2 teaspoons soy sauce.

  4. Add sliced baby Bok Choy.

  5. Allow to cook with mushrooms for 2 minutes.

  6. Add edamame and peas.

  7. Stir to warm peas and edamame through and cook off liquid.

  8. Serve with jasmine rice.
