Miso Maple Glazed Chickpeas

Ingredients

  • 1 can canned chickpeas, rinsed and drained
  • 1/4 red onion cut into strips
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tsp miso paste
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 1/4 cup water
  • 1 tsp corn starch ?

Preparation

  1. Combine all liquids and seasonings to a bowl and whisk together to combine

  2. Add onion to a pan and sauté until softened

  3. Add in chickpeas and cook until warmed through, 2 minutes

  4. Add in sauce to pan and with a spatula coat chickpeas and allow sauce to thicken, about 2-3 minutes

  5. Remove from heat and serve immediately
