Orange Chickpea and Veggie Stir Fry
Ingredients
- 1 can chickpeas, rinsed and drained
- 1/4 red onion, roughly chopped
- 1/2 zucchini, sliced and quartered
- 1 cup roasted broccoli
- 1/2 naval orange
- 1 tbsp soy sauce
- 1 tsp maple syrup
- 1/2 tsp ginger powder
- 1 tsp red pepper flakes
- 1/2 tsp cornstarch
- 2 tbsp water
Preparation
Mix the sauce ingredients together and set aside
Heat a skillet or wok over medium-high heat and add a small amount of oil
Add the chickpeas, red onion, and zucchini; stir-fry for 3-5 minutes until vegetables begin to soften
Stir in the roasted broccoli and cook for another 2 minutes
Pour in the sauce mixture and cook until it thickens and coats the ingredients, about 1-2 minutes
Add the naval orange segments or juice and heat through before serving
