Orange Chickpea and Veggie Stir Fry

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1/4 red onion, roughly chopped
  • 1/2 zucchini, sliced and quartered
  • 1 cup roasted broccoli
  • 1/2 naval orange
  • 1 tbsp soy sauce
  • 1 tsp maple syrup
  • 1/2 tsp ginger powder
  • 1 tsp red pepper flakes
  • 1/2 tsp cornstarch
  • 2 tbsp water

Preparation

  1. Mix the sauce ingredients together and set aside

  2. Heat a skillet or wok over medium-high heat and add a small amount of oil

  3. Add the chickpeas, red onion, and zucchini; stir-fry for 3-5 minutes until vegetables begin to soften

  4. Stir in the roasted broccoli and cook for another 2 minutes

  5. Pour in the sauce mixture and cook until it thickens and coats the ingredients, about 1-2 minutes

  6. Add the naval orange segments or juice and heat through before serving
