Raw Matcha Collagen Bites

Ingredients

  • 1 cup walnuts
  • 1 cup soaked cashews (7+ hours)
  • 1/2 cup dates
  • 1/4 cup shredded sulphur free coconut flakes
  • 1 scoop @vitalproteins matcha collagen blend
  • 1/2 scoop @vitalproteins collagen
  • 1 1/3 tbsp lemon juice
  • 2 tbsp coconut oil
  • 1 tsp lime juice
  • 1 tsp sea salt

Preparation

  1. In a blender, mix walnuts, coconut flakes and dates until a sticky consistency forms.

  2. Add a tablespoon of the mixture into mini muffin templates or a regular pan and place in the freezer for thirty minutes.

  3. In the blender, blend soaked cashews, lemon juice, sea salt, lime juice and coconut oil until a very creamy consistency forms.

  4. Add two tablespoons of the creamy mixture to the tops of the muffin tin.

  5. Place in the freezer for 30 minutes.
