Creamy Dreamy Raspberry Cheesecake
Ingredients
Crust
- 200 g white almonds, roasted
- 25 g shredded coconut
- 3 dates, pitted
Filling
- 250 g soaked cashews
- 130 ml oat milk
- 100 ml maple syrup
- 4 tbsp lemon juice
- 1/2 tsp ground tonka bean
- 100 g fresh or frozen raspberries
Preparation
Blend the crust ingredients until crumbly and press into a pan to form the base
Blend the filling ingredients until smooth and creamy
Pour the filling over the crust and refrigerate for several hours or until set
