Creamy Dreamy Raspberry Cheesecake

Ingredients

Crust

  • 200 g white almonds, roasted
  • 25 g shredded coconut
  • 3 dates, pitted

Filling

  • 250 g soaked cashews
  • 130 ml oat milk
  • 100 ml maple syrup
  • 4 tbsp lemon juice
  • 1/2 tsp ground tonka bean
  • 100 g fresh or frozen raspberries

Preparation

  1. Blend the crust ingredients until crumbly and press into a pan to form the base

  2. Blend the filling ingredients until smooth and creamy

  3. Pour the filling over the crust and refrigerate for several hours or until set
