Vegan Taco Quinoa Bowl
Ingredients
- 1.5 cups dried quinoa
- 3 cups water
- 0.25 cup shredded carrots
- 0.25 cup diced tomatoes
- 1 package taco seasoning
- 0.5 cup black beans
- 2 tablespoons vegan sour cream
- 1/3 cup chopped red onion
- 1 cup kale
- 0.5 cup corn
- 0.5 chopped avocado
- 1 small lime
- 0.5 small diced green pepper
- 1 tablespoon sesame seeds
- Salt and pepper to taste
- Chives and cilantro to taste
Preparation
Cook quinoa according to package instructions.
Stir in taco seasoning.
Chop and measure all of the remaining ingredients.
Put the kale on the bottom of the bowl.
Spoon flavored quinoa into the bowl.
Add all the delicious toppings.
