Quick Gluten-Free Tofu Rice Bowl

Ingredients

  • 1 pack Tilda Basmati Rice
  • 375g block of firm tofu
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp maple syrup or sweetener of choice
  • Pinch of chilli flakes
  • Pinch of turmeric
  • Sesame seeds
  • 1 cucumber, sliced

Preparation

  1. Slice the tofu into large pieces. In a bowl, combine all the ingredients for the marinade.

  2. Place each piece of tofu inside the marinade and flip to coat both sides.

  3. Cook the tofu in an air fryer for 10 minutes at 200°C, turning once and brushing more marinade on top. Alternatively, you can cook it in the oven at the same temperature for 10-15 minutes.

  4. Heat the Tilda rice in the microwave and transfer it to a bowl. Top the rice with the crispy tofu pieces and sliced cucumber.

  5. Enjoy your quick and delicious gluten-free tofu rice bowl!
