Southern Chicken Salad Sandwich

Ingredients

  • 2 cups shredded chicken
  • 1/2 cup mayo (avocado oil mayo)
  • 1/3 cup diced grapes
  • 2/3 cup diced celery
  • 1/4 tsp. paprika powder
  • 1/4 tsp. garlic powder
  • Salt and pepper

Preparation

  1. In a high-powered blender or food processor, pulse the chicken until it's finely shredded.

  2. In a mixing bowl, combine the shredded chicken, mayo, diced grapes, diced celery, paprika powder, garlic powder, salt, and pepper. Stir well to combine.

  3. Toast two pieces of Canyon Gluten-Free Heritage Style bread.

  4. Layer butter lettuce on one piece of toasted bread.

  5. Spread the chicken salad mixture over the lettuce.

  6. Place the second piece of toasted bread on top of the chicken salad layer.

  7. Optionally, you can add more butter lettuce on top before closing the sandwich.
