Vegan and Gluten-Free Creamed Corn
Ingredients
- 1 15-ounce can of corn (drained and pat dry)
- 2 tbsp vegan butter
- 1 cup full-fat coconut milk (white part only, drain the watery part and save for other uses)
- 2 tbsp almond flour
- 1 tbsp coconut sugar
- 1 tbsp arrowroot flour
- Sprinkle of salt
Preparation
Heat a saucepan over low heat and add the vegan butter. Cook until melted.
Add the coconut milk (only the white part), almond flour, and a sprinkle of salt to the saucepan. Stir well.
Increase the heat to medium and whisk the mixture until it starts to thicken. Add the arrowroot flour and continue stirring until it becomes thicker.
Stir in the corn and coconut sugar.
Cook the mixture over low to medium heat for about 5 minutes, or until it's warm enough to serve.
Adjust the taste by adding a little more vegan butter or salt if desired.
