Blueberry Cheesecake Baked Oats

Ingredients

  • 60g (2/3 cup) oats
  • 2 tbsp low-fat plain or vanilla yoghurt
  • Handful blueberries
  • Splash lemon juice
  • 1/2 tsp baking powder
  • 1 tbsp sweetener or syrup
  • 2 tsp cream cheese
  • 3 tbsp boiling water

Preparation

  1. Pre-heat the oven to 200C/ 400F/ gas mark 6.

  2. Put boiling water and oats in a bowl and stir with a spoon to thicken slightly.

  3. Leave for a couple of minutes.

  4. Add all of the other ingredients into the bowl and stir with a spoon.

  5. Pour the mixture into a shallow oven-proof dish lined with baking parchment or paper.

  6. Make a dent in the middle and put 1 tsp of cream cheese.

  7. Bake in the oven for around 30 minutes.

  8. Serve with 1 tsp extra cream cheese (optional) and berries.

Tips

  1. For vegan version, use dairy-free cream cheese like Violife and soya, almond, or coconut yoghurt.

  2. For gluten-free version, use gluten-free oats and baking powder.
