Coconut Ginger Oats

Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp ground flax seeds
  • 1 tbsp coconut flakes
  • 1/4 tsp cinnamon
  • 1/4 tsp ginger
  • 1 mashed medjool date
  • 1 cup unsweetened almond milk

Preparation

  1. Combine all ingredients in a sauce pan and bring to a simmer

  2. Stir well and allow to thicken and cook for 3-5 minutes

  3. Remove from stove top and serve topped with fruit

  4. I went with banana, golden berries, blueberries, pomegranate seeds, hemp seeds, and pepitas
