Delicious Vegan Banana Chocolate Pancakes
Ingredients
- 1 very ripe banana
- 1-2 cups almond milk
- 25g coconut sugar
- 1/2 cup all-purpose flour
- 1/2 cup oat flour (blend oats very thin)
- 1/2 teaspoon baking powder
- 3 tablespoons cocoa powder
- 2 tablespoons dark chocolate chips
- some vegan butter
Preparation
In a bowl, mash up the ripe banana and add all the dry ingredients like the oat flour, all-purpose flour, cocoa powder, coconut sugar.
Add the almond milk and give it a quick whisk.
Add baking powder and whisk until incorporated.
Fold in the chocolate chips.
Use a napkin to swipe through the vegan butter to grease the pan or use a bit of oil to griddle the pan.
Heat the pan to medium to low heat.
Add a small bit of pancake batter.
Let it cook until the middle becomes bubbly and the corners set, then flip with a spatula.
Let it cook on the other side until done.
Repeat the process for all the pancakes.
