Delicious Vegan Banana Chocolate Pancakes

Ingredients

  • 1 very ripe banana
  • 1-2 cups almond milk
  • 25g coconut sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup oat flour (blend oats very thin)
  • 1/2 teaspoon baking powder
  • 3 tablespoons cocoa powder
  • 2 tablespoons dark chocolate chips
  • some vegan butter

Preparation

  1. In a bowl, mash up the ripe banana and add all the dry ingredients like the oat flour, all-purpose flour, cocoa powder, coconut sugar.

  2. Add the almond milk and give it a quick whisk.

  3. Add baking powder and whisk until incorporated.

  4. Fold in the chocolate chips.

  5. Use a napkin to swipe through the vegan butter to grease the pan or use a bit of oil to griddle the pan.

  6. Heat the pan to medium to low heat.

  7. Add a small bit of pancake batter.

  8. Let it cook until the middle becomes bubbly and the corners set, then flip with a spatula.

  9. Let it cook on the other side until done.

  10. Repeat the process for all the pancakes.

  11. Enjoy them!
