Protein-Rich Avocado Beans Toast
Ingredients
Beans
- 2 teaspoons oil
- 1 teaspoon cumin seeds
- 2-3 minced garlic cloves
- 1 chopped medium onion
- 1 teaspoon ground coriander
- 1.5 teaspoons Kashmiri chili powder
- 1.5 teaspoons oregano
- salt to taste
- water as needed
- 1 cup boiled kidney beans
- optional chopped red and green bell peppers
Salsa
- 2-3 teaspoons finely chopped tomatoes
- 1 diced onion
- 2 chopped green chilies
- some fresh coriander
- salt to taste
- 2 teaspoons tomato ketchup
- crushed black pepper to taste
Avocado spread
- 1 ripe avocado
- lime juice to taste
- salt to taste
- black pepper to taste
Bread
- bread slices, to be toasted
Preparation
Beans
Heat 2 teaspoons oil in a pan.
Add 1 teaspoon cumin seeds and let them crackle.
Toss in 2-3 minced garlic cloves and 1 chopped medium onion and sauté until the onion is soft.
Stir in 1 teaspoon ground coriander, 1.5 teaspoons Kashmiri chili powder, 1.5 teaspoons oregano, and salt to taste.
Sprinkle some water to avoid burning.
Add 1 cup of boiled kidney beans and mix well.
Cover and let it cook for 7-10 minutes on medium flame.
Coarsely mash the kidney beans, remove from heat, and optionally fold in some chopped red and green bell pepper and set aside.
Salsa
Combine 2-3 teaspoons finely chopped tomatoes, 1 diced onion, 2 chopped green chilies, and some fresh coriander.
Add salt, 2 teaspoons tomato ketchup, and crushed black pepper and stir everything together and set aside.
Avocado spread
Mash a ripe avocado until smooth.
Mix in lime juice, salt, and pepper to taste.
Assembly
Spread the avocado mixture on toasted bread.
Pile on the beans mixture.
Top it off with the salsa.
