Pumpkin Pancakes with Coconut Yogurt Topping

Ingredients

  • 200g flour
  • 3 tbsp pumpkin puree
  • 1 tsp baking powder
  • 4 tbsp coconut yogurt
  • 100ml plant milk
  • optional sweetener
  • some soda water

Spices

  • cinnamon
  • ginger
  • nutmeg
  • cloves

Toppings

  • 1 tbsp pink pitaya powder
  • yogurt
  • frozen berries

Preparation

  1. Mix all dry ingredients in a bowl.

  2. Mix all wet ingredients except soda water.

  3. Combine the dry and wet mixtures and stir well until combined.

  4. Let the mixture sit for about 10 minutes.

  5. Add the soda water.

  6. Bake the pancakes.

  7. Enjoy them with the toppings.
