Savory Japanese Sweet Potato Breakfast Bowl

Ingredients

  • 1/2 Japanese sweet potato
  • 1/2 avocado
  • Spinach
  • Brussels sprouts
  • 1 egg
  • BBQ seasoning
  • 1 tablespoon avocado oil
  • Garlic ghee
  • Everything but the bagel seasoning

Preparation

  1. Cut Japanese sweet potato into slices and bake at 400F for 20 minutes on each side; can be prepped the night before.

  2. Roast Brussels sprouts at 400F for 40 minutes, coated with BBQ seasoning and 1 tablespoon avocado oil.

  3. Sauté spinach.

  4. Fry an egg in garlic ghee.

  5. Assemble by topping the baked sweet potato with 1/2 avocado, sautéed spinach, roasted Brussels sprouts, and the fried egg.

  6. Top the assembled dish with everything but the bagel seasoning.
