Savory Japanese Sweet Potato Breakfast Bowl
Ingredients
- 1/2 Japanese sweet potato
- 1/2 avocado
- Spinach
- Brussels sprouts
- 1 egg
- BBQ seasoning
- 1 tablespoon avocado oil
- Garlic ghee
- Everything but the bagel seasoning
Preparation
Cut Japanese sweet potato into slices and bake at 400F for 20 minutes on each side; can be prepped the night before.
Roast Brussels sprouts at 400F for 40 minutes, coated with BBQ seasoning and 1 tablespoon avocado oil.
Sauté spinach.
Fry an egg in garlic ghee.
Assemble by topping the baked sweet potato with 1/2 avocado, sautéed spinach, roasted Brussels sprouts, and the fried egg.
Top the assembled dish with everything but the bagel seasoning.
