Sweet and juicy vanilla maple roasted strawberries

Ingredients

  • 1 pound strawberries (stems removed, sliced)
  • 1/4 cup pure maple syrup
  • 2 tsp vanilla bean extract

Serving

  • 1 cup plant-based yogurt of choice
  • 1/3 cup organic muesli

Preparation

  1. Preheat oven to 180°C/350°F.

  2. Place the strawberries in a baking dish.

  3. Pour maple syrup over the strawberries, add vanilla and toss until well combined.

  4. Place the baking dish in the oven and roast for about 10-15 minutes, stirring once during the baking time.

  5. Check if strawberries have softened and juices are thick and bubbly.

  6. Cool completely and store in an airtight container in the fridge if not serving immediately.

  7. To serve, spoon yogurt into a serving plate, top with roasted strawberries and muesli. Enjoy!
