Valentine's Day Poppers with Almond Butter and Strawberries

Ingredients

  • 1/2 cup creamy almond butter
  • 1/4 cup pure maple syrup
  • 1/4 cup + 2 tbsp coconut flour
  • 1/2 cup melted chocolate chips (with coconut oil)
  • about 3-4 finely chopped strawberries

Preparation

  1. Mix together almond butter, maple syrup, and coconut flour then place dough in the freezer for 15 minutes.

  2. While waiting, dice the strawberries and set aside, and melt the chocolate with about 1 tsp of coconut oil over stove top.

  3. Remove dough from the freezer and scoop out balls using a cookie scooper.

  4. Flatten each ball and fill with a small amount of chopped strawberries.

  5. Carefully pinch sides until fully closed and lightly roll back into ball form.

  6. Place back in freezer for another 15 minutes.

  7. Remove, dip halfway into chocolate, place back on sheet and freeze until hardened.

  8. Store in airtight container in fridge and enjoy.
