Easy Vegan Energy Bites

Ingredients

  • 1 1/4 cups rolled oats
  • 2 tablespoons chia seeds
  • 1/2 cup creamy almond butter
  • 1/3 cup liquid sweetener (such as date nectar or maple syrup)
  • 1 teaspoon vanilla extract

Mix-ins

  • 1/3 cup chocolate chips (for Classic Chocolate Chip)
  • 2 tablespoons cacao powder and 1/3 cup chocolate chips (for Double Chocolate)
  • Reduce rolled oats to 1 cup and add 1/2 cup coconut flakes, 1/4 cup slivered almonds, 1/4 cup chocolate chips (for Almond Coconut Delight)

Preparation

  1. Mix your base ingredients into a large bowl.

  2. Add in your extras after you have the base mixed up, then place in the refrigerator to set for 30-60 minutes.

  3. Roll into balls and store in the fridge for up to 2 weeks or freezer for up to 3 months.
