Vegan Breakfast Jars with Turmeric Granola

Ingredients

Granola

  • 200 g oats
  • 60 g coconut flakes
  • 60 g almonds, chopped
  • 20 g puffed amaranth
  • 30 g coconut blossom sugar
  • 2 tsp turmeric
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 50 ml coconut oil, melted
  • 40 ml water
  • 80 g banana chips

Breakfast jar components

  • Yogurt
  • Strawberries
  • Gooseberries

Preparation

  1. Preheat the oven to 160°C.

  2. Mix all dry granola ingredients except banana chips in a large mixing bowl.

  3. Add water and melted coconut oil to the dry ingredients and mix until no dry parts remain.

  4. Spread the granola on a baking sheet lined with baking paper and bake for 15-20 minutes until golden brown, rotating the sheet after 10 minutes for even toasting.

  5. Let the granola cool completely on the baking sheet before transferring to a jar.

  6. To assemble the breakfast jars, layer yogurt, fresh strawberries, gooseberries, and the prepared granola in jars.
