Baked Fish with Sumac
Ingredients
- 1.5 kg fish
- 5 large onions, sliced
- 6 cloves garlic, sliced
- 2 green bell peppers, sliced
- 2 tablespoons olive oil
- 1 tablespoon finely chopped coriander
- 1 teaspoon cumin
- 0.5 teaspoon ground ginger
- 1 teaspoon salt
- 2 tablespoons sumac
Preparation
Adjust the oven rack and preheat the oven to 180°C. Prepare a shallow baking tray or suitable dish.
In a bowl, combine onion, green pepper, garlic, salt, ginger, cumin, coriander, sumac, and olive oil. Rub the mixture with your hands to mix well.
Spread the onion mixture in the baking tray to form a layer, then place the fish on top.
Stuff some of the onion mixture inside and on top of the fish.
Drizzle some olive oil over the fish and cover it with aluminum foil.
Bake in the oven until the fish is cooked. Serve on a plate with the onion mixture and garnish with pine nuts.
