Vegan Chocolate Cake
Ingredients
- 3 ripe bananas
- 1/4 cup tahini
- 2 chia seeds + 5 tbsp water
- 2 cup cacao milk (or plant-based milk + 2 tbsp cacao + 4 tbsp molasses/maple syrup)
- 6 cl cherry liquor
- 1 tsp vanilla powder
- 4 tbsp cacao
- 2 tsp of baking powder
- 2 1/2 cups oats processed into flour (260 g, there shall be still some pieces of oats left. if using ready oat flour, use 2 cups oat flour and 1/2 cups rolled oats)
- pinch of salt
- chocolate ganache:
- 3/4 cup coconut cream
- 150 g vegan dark chocolate
Preparation
Preheat your oven to 160c
Start with preparing the flax/chia egg by combining ground seeds and water
Stir and set aside
In a medium-sized bowl, mash bananas using a fork until it has a runny texture
Add in all the wet ingredients, stir to combine
Set aside
Combine all dry ingredients in a separate bowl
Add your dry mixture into wet mixture bowl slowly, and stir to combine
Do not overmix ?
Transfer the mixture to a parchment paper-lined springform, and smooth the top
Position the tray just below the center
Bake for about 70-80 minutes or until toothpick inserted comes out clean
Wait until the cake cools off completely before covering it with the chocolate sauce
Decorate it with your favorite fruits
Keep leftovers in an airtight container in the fridge
