Blueberry Chocolate Breakfast Bars

Ingredients

  • 1 tsp vanilla extract
  • 2 tbsp unsweetened applesauce
  • can replace with coconut oil)
  • 1 tbsp almond butter
  • 3-4 tbsp maple syrup
  • 1 serving protein powder
  • 1 1/2 cup sprouted & soaked gf oats
  • 1/4 cup buckwheat or almond flour
  • 1 tbsp coconut flour
  • 1 tsp cacao powder
  • 1/2 cup fresh blueberries
  • 1 tbsp dark chocolate chips
  • 1 tsp cinnamon
  • dash of sea salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tbsp ashwaghanda
  • 1/2 tbsp lucuma

Preparation

  1. In a large bowl, mix flax egg, vanilla, syrup, and applesauce

  2. Add oats, flours, cacao powder, and mix until combined well

  3. Fold in blueberries and chocolate chips

  4. Add cinnamon, sea salt and baking soda and powder and mix well

  5. Pour into a parchment paper lined bread pan and bake at 350 for 20-23 minutes
