Easy 3-Ingredient Baked Banana Oat Cookies

Ingredients

  • 2 ripe bananas (about 300 g)
  • 120 g rolled oats
  • a pinch of salt (optional)

Optional mix-ins

  • chocolate chips
  • chopped macadamia nuts
  • chopped hazelnuts
  • raisins

Preparation

  1. Preheat the oven to 180°C (convection: 160°C) and line a baking sheet with parchment paper

  2. Peel the bananas, place them in a bowl, and mash finely with a fork

  3. Add the rolled oats and salt, and mix well

  4. Stir in chocolate chips or chopped nuts if desired

  5. Let the mixture rest for at least 5 minutes

  6. Shape the oat mixture into rounds with your hands or two spoons, placing them on the baking sheet with space between

  7. If the dough is too soft, let it rest longer or mix in 1 tablespoon of starch

  8. Bake in the preheated oven for 15-20 minutes until the edges are lightly browned

  9. Let the cookies cool completely

  10. Store in an airtight container at room temperature for at least 3 days
