Simple Vegan Coconut Cream Oats

Ingredients

  • 1/2 cup rolled oats
  • 1/2 tbsp ground flaxseed
  • Pinch of cinnamon
  • Pinch of salt
  • Pinch of cardamom
  • 1 tsp maple syrup or one medjool date mashed
  • 1 cup unsweetened soy milk
  • 3 tbsp canned coconut milk

Preparation

  1. Add all ingredients to a saucepan and stir together.

  2. Bring to a simmer and cook for 5 minutes, making sure to continue stirring.

  3. Remove from stovetop and top with your favorite toppings.

Toppings suggestions

  1. Add cashew butter for extra flavor.

  2. Try sautéed peaches with pepitas, pecans, a drizzle of date syrup, and cacao nibs for fun variations.
