Easy No-Bake Granola Bars

Ingredients

  • 220 g pitted dates
  • 84 g maple syrup, honey or agave nectar
  • 64 g salted natural peanut butter or almond butter
  • 112 g roasted unsalted almonds, roughly chopped
  • 135 g rolled oats

  • Cacao bibs
  • Carob buds
  • Dried fruit
  • Nuts
  • Banana chips
  • Coconut
  • or anything you like

Preparation

  1. Process dates in a food processor until small bits remain, about 1 minute, until a dough-like consistency forms.

  2. Toast oats and almonds if raw in a 176°C oven for 10-15 minutes or until slightly golden brown; otherwise, leave them raw.

  3. Place oats, almonds, and dates in a large mixing bowl and set aside.

  4. Warm the syrup of choice and peanut butter in a small saucepan over low heat, stir, and pour over the oat mixture; then mix, breaking up the dates to distribute throughout.

  5. Once thoroughly mixed, transfer to an 8x8-inch baking dish lined with plastic wrap or baking paper. Press down firmly with slightly damp hands until evenly flat, cover, and place in the freezer for 15-20 minutes.

  6. Remove bars from the pan and chop into 10 even bars.

Storage

  1. Store in an airtight container for up to a few days or in the freezer to keep them fresh longer.
