Gluten-Free Chocolate Cookies with Date Caramel

Ingredients

Date caramel

  • 230g dates
  • 190g boiling water
  • 2 pinches of fleur de sel

Cookies

  • 165g white rice flour
  • 70g buckwheat flour
  • 15g cacao powder
  • 4 baking powder
  • 2g salt
  • 2g instant coffee
  • 100g unsweetened applesauce
  • 60g coconut sugar
  • 50g tahini
  • 70g dark chocolate

Preparation

  1. Cover the dates with boiling water for 10-20 minutes or until tender.

  2. Then, blend them with the water (unpitted) and add 2 pinches of salt.

  3. Preheat the oven to 180°C.

  4. In a bowl, mix together the applesauce, sugar and tahini.

  5. In another bowl, mix all the other dry ingredients.

  6. Add the previous mixture to this one and stir until you can shape a ball, adding a bit of water if necessary.

  7. Add the roughly chopped dark chocolate.

  8. Make 12-13 little balls and shape them into cookies before baking.

  9. Bake for 17 minutes at 180°C.
