Gluten-Free Chocolate Cookies with Date Caramel
Ingredients
Date caramel
- 230g dates
- 190g boiling water
- 2 pinches of fleur de sel
Cookies
- 165g white rice flour
- 70g buckwheat flour
- 15g cacao powder
- 4 baking powder
- 2g salt
- 2g instant coffee
- 100g unsweetened applesauce
- 60g coconut sugar
- 50g tahini
- 70g dark chocolate
Preparation
Cover the dates with boiling water for 10-20 minutes or until tender.
Then, blend them with the water (unpitted) and add 2 pinches of salt.
Preheat the oven to 180°C.
In a bowl, mix together the applesauce, sugar and tahini.
In another bowl, mix all the other dry ingredients.
Add the previous mixture to this one and stir until you can shape a ball, adding a bit of water if necessary.
Add the roughly chopped dark chocolate.
Make 12-13 little balls and shape them into cookies before baking.
Bake for 17 minutes at 180°C.
