Homemade Creamy Vegetable Udon Noodles Dish

Ingredients

  • 1 roasted bell pepper
  • 2 cups chopped tomatoes
  • 1 garlic clove
  • 1/2 tsp onion powder
  • fresh ginger (optional)
  • 2 tbsp tamari sauce
  • 1 tbsp red miso paste
  • pepper to taste
  • 1/2 cup plant-based milk
  • yellow bell peppers
  • onions
  • broccoli
  • mushrooms
  • carrots
  • 600g cooked udon noodles
  • Chile de árbol (optional)

Preparation

  1. Blend all sauce ingredients together to create the sauce.

  2. In a pan, sauté the vegetables and cooked udon noodles.

  3. Mix the sauce with the sautéed vegetables and udon noodles.

  4. Simmer the mixture for 15 minutes.

  5. Add Chile de árbol for spiciness if desired.
