Simple Vegan BLT Salad

Ingredients

  • butter lettuce or romaine, chopped
  • arugula
  • smoky tempeh fakin bacon, cooked and crumbled
  • tomatoes, sliced
  • avocado, sliced
  • pea tendrils
  • EBTB seasoning

Dressing

  • 1 tsp veganaise
  • 2 TBSP vegan yogurt
  • 1/2 lemon, juiced

Preparation

  1. Cook and crumble the smoky tempeh fakin bacon

  2. Add all salad ingredients to a large bowl except bacon, pea tendrils, and seasoning.

  3. Whisk dressing ingredients together in a small bowl and drizzle over salad, then toss to combine.

  4. Add in bacon and gently mix.

  5. Top with a sprinkle of EBTB and garnish with pea tendrils.
