Simple Vegan BLT Salad
Ingredients
- butter lettuce or romaine, chopped
- arugula
- smoky tempeh fakin bacon, cooked and crumbled
- tomatoes, sliced
- avocado, sliced
- pea tendrils
- EBTB seasoning
Dressing
- 1 tsp veganaise
- 2 TBSP vegan yogurt
- 1/2 lemon, juiced
Preparation
Cook and crumble the smoky tempeh fakin bacon
Add all salad ingredients to a large bowl except bacon, pea tendrils, and seasoning.
Whisk dressing ingredients together in a small bowl and drizzle over salad, then toss to combine.
Add in bacon and gently mix.
Top with a sprinkle of EBTB and garnish with pea tendrils.
