Thin Mint Copycat Protein Bars
Ingredients
- 1 cup fine oat flour
- 1/4 cup cocoa powder
- 1/4 cup vanilla protein powder
- 1/4 tsp salt
- 1/2 cup almond butter
- 1/3 cup honey
- 1 tbsp melted coconut oil
- 1/2 tsp peppermint extract
- 1/2 cup mini chocolate chips
Preparation
In a mixing bowl, combine fine oat flour, cocoa powder, vanilla protein powder, and salt.
Add almond butter, honey, melted coconut oil, and peppermint extract to the dry ingredients. Stir until well combined.
Mix in the mini chocolate chips.
Press the mixture into a bread loaf pan.
Sprinkle more chocolate chips on top.
Refrigerate or freeze the pan for at least 30 minutes to set.
Store the bars in the fridge or freezer.
