Vegan Chickpea Tuna Salad
Ingredients
- 1 can garbanzo beans
- 1/2 avocado
- 1-2 tablespoons stone ground mustard
- 1/2 lemon or 1-2 tablespoons lemon juice
- Cucumber or celery, chopped into small bits
- Optional: diced onion
Seasonings
- Lemon pepper to taste
- Garlic and herb mix to taste
Preparation
Drain and rinse the garbanzo beans
Mash the garbanzo beans with a fork until desired consistency is reached
Mash the avocado and mix it thoroughly with the mashed garbanzo beans
Add the stone ground mustard and lemon juice, stirring well to combine
Chop the cucumber or celery into small pieces and fold them into the mixture
Optionally, add diced onion if available
Season with lemon pepper and garlic herb mix to taste, adjusting for flavor
Serve the mixture on toast, rice cakes, or lettuce wraps as desired
