Vegan Pumpkin Protein Bars with Chocolate Coating

Ingredients

  • 1 cup cashew/coconut/tahini butter
  • 1/2 cup pumpkin puree
  • 3/4 cup Pumpkin Spice protein powder @310nutrition
  • 1/4 cup pure date puree or maple syrup
  • 1 tsp turmeric* or 1 scoop @310Nutrition Golden Milk
  • 1/2 tsp pumpkin spice or cinnamon*
  • Pinch of pink sea salt
  • 1/2 cup (4oz) melted chocolate, for coating

Preparation

  1. Mix everything together, except the chocolate, to form a dough.

  2. Pour the dough into a dish lined with parchment paper.

  3. Pour the melted chocolate on top of the dough.

  4. Chill the mixture to set the bars.

  5. Once set, cut into bars and enjoy!
