Vegan Rainbow Sushi Rolls

Ingredients

  • 2 nori seaweed sheets
  • 1 cup sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • Assorted vegetables (carrots, cucumber, avocado, bell peppers, etc.)

For serving

  • Pickled ginger
  • Soy sauce

Preparation

  1. Cook sushi rice according to package directions and let cool slightly

  2. Mix the cooked rice with rice vinegar, sugar, and salt

  3. Prepare assorted vegetables by cutting into thin matchsticks

  4. Place a nori sheet shiny side down on a bamboo sushi mat

  5. Spread the seasoned rice evenly over the nori, leaving a 1-inch border at the top

  6. Arrange the vegetables horizontally across the center of the rice

  7. Roll the sushi tightly using the bamboo mat

  8. Slice the roll into 6-8 pieces with a sharp knife

  9. Serve with pickled ginger and soy sauce on the side
