Vegan Tempeh Sushi Sandwich

Ingredients

  • 1 cup cooked brown rice
  • Sushi rice seasoning
  • 1 sheet nori
  • 1 chickpea and linseed tempeh
  • 1/3 cup thinly sliced carrot
  • 1/2 cucumber
  • 1/2 avocado
  • 1 teaspoon olive oil

Preparation

  1. Prepare the tempeh by slicing it through the middle, cutting it into a 10cm square, and shallow frying in 1 teaspoon olive oil until golden brown.

  2. Cook brown rice until well cooked, then add sushi seasoning and allow to cool.

  3. To assemble the sandwich, place nori sheet shiny side down on a piece of plastic wrap.

  4. Place half of the rice onto the center of the nori sheet in a 10cm square at a 45-degree angle.

  5. Place tempeh on top of rice, then layer the remaining ingredients.

  6. Fold the corners of the nori sheet into the center to create a square.

  7. Gather the plastic wrap around the sandwich and place seam side down in the fridge for 10-15 minutes.

  8. With a sharp wet knife, slice through the center of the sandwich. Enjoy!
