15-Minute Sweet Potato Pita

Ingredients

  • 1/2 cup coconut milk dairy-free yogurt
  • 1 cup cooked mashed sweet potato
  • 1.5 cups whole wheat flour
  • 1.5 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp garlic powder

Preparation

  1. In a bowl, combine yogurt, cooked sweet potato, flour, baking soda, salt, and garlic.

  2. Mix well until it forms a dough, then flour your hands and form into a perfectly round dough ball.

  3. Flour your cutting board lightly, put the dough on the cutting board, and cut into 8 equal pieces.

  4. Roll each piece and flatten a bit with your hands; they should be about 3-4 inches in diameter.

  5. Heat a nonstick pan or cast iron pan to medium-high heat and spray with olive oil. Pan fry each pita for about 2 minutes per side until golden and a little charred.

  6. Serve hot and fresh with any dip like hummus.
