Easy No-Knead Oat Bread
Ingredients
- 200g gluten-free oats
- 365g whole wheat flour or buckwheat flour for gluten-free option
- 2g fresh yeast
- 12g salt
- 425ml water
Preparation
Mix the yeast with a small amount of water in a small bowl
In a large bowl, combine the water and salt
Add the flour, oats, and yeast mixture, and stir until a uniform, sticky dough forms
Cover with a tea towel and let the dough rise for 12 hours in a warm, dark place
Line a loaf pan with baking paper
Pour the risen dough into the pan and sprinkle the top with extra oats
Cover again and let rise for another 45 minutes
Preheat the oven to 230°C and place a baking sheet and rack in the oven
Score the dough lengthwise and place the pan on the rack
Pour a layer of water on the hot baking sheet, being careful of steam, and bake for 30 minutes
Remove the baking sheet and the bread from the oven, carefully remove the bread from the pan while leaving the baking paper, cover the top with aluminum foil, and bake for another 10-15 minutes until the bottom feels dry
Let the bread cool for 30 minutes before slicing
