Açaí Blueberry Smoothie Bowl with Ginger

Ingredients

  • 1 overly ripe avocado or 1/2 avocado
  • 1 cup frozen scoopable açaí
  • 1 heaped tbsp coconut yoghurt
  • 2cm piece of fresh ginger
  • A handful of blueberries

Toppings

  • Frozen raspberries
  • Dark chocolate
  • Chunk of vegan chocolate

Preparation

  1. Blend the avocado, açaí, coconut yoghurt, ginger, and blueberries until smooth.

  2. Melt the dark chocolate.

  3. Top the smoothie with frozen raspberries, melted dark chocolate, and a chunk of vegan chocolate.
