Blood Orange Banana Bread

Ingredients

  • 3 ripe bananas
  • 40g melted coconut oil
  • 2 flax eggs
  • Juice of half an orange (caution if your orange is too red it will add a little colour!)
  • Zest of a whole orange
  • 1 tsp vanilla extract
  • 150g gluten free self raising flour
  • 50g vanilla buttercream protein (optional, sub more flour)
  • 60g sweetener/sugar
  • 1 tsp baking powder

Preparation

  1. Preheat the oven to 170 degrees and line a loaf tin

  2. In a large mixing bowl mash bananas until smooth. Add the coconut oil, flax eggs, orange juice, zest and vanilla. Whisk until well incorporated

  3. Add in flour, protein, sweetener and baking powder. Whisk together until incorporated, making sure no flour patches remain

  4. Pour into tin and bake for 40 minutes or until just golden

  5. Allow to cool then drizzle with some melted chocolate orange spread and finish with some blood orange slices and a few berries
