Buffalo Chickpea Tacos

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 3-4 tbsp franks red hot buffalo sauce
  • 1/4 red onion, minced
  • 1/2 tsp dry basil
  • 1/2 tsp smoked paprika
  • 3 tbsp water
  • 1/8 tsp corn starch

Preparation

  1. Add all ingredients to a sauce pan at the same time and bring sauce to a low simmer

  2. Stir and allow to thicken, about 5 minutes

  3. Set aside and assemble tacos

  4. Feel free to use your own ingredients inside

  5. If you need some inspo, these are with 3 corn tortillas and stuffed with spring mix, sauted mushrooms, shredded brussel sprouts, avocado, extra minced red onion and red pepper for extra heat
