Chana Masala

Ingredients

  • 2 tbsp / 30 ml olive oil
  • 2-3 garlic cloves, finely chopped
  • 1 large onion, finely sliced
  • 5 tsp of finely grated ginger
  • 1-1.5 tsp salt
  • 2 tsp ground coriander
  • 4 tsp ground cumin
  • 1.5 tsp ground turmeric
  • 2 tsp garam masala
  • 5 cups cooked chickpeas
  • 2 x 400g tins of plum tomatoes
  • 2 tsp sweetener (especially if tinned tomatoes contain citric acid)

Preparation

  1. Cooked basmati rice, to serve

  2. Fresh coriander, to serve
