Cheesy Scrambled Tofu and Spinach Sandwich

Ingredients

  • makes 3-4 sandwiches
  • 1 tsp oil (optional)
  • 1/2 block extra firm tofu, rinsed and patted dry with a paper towel and then chopped finely into tiny cubes
  • 2 cups baby spinach, chopped
  • 1 tsp nutritional yeast
  • 1 jalapeño, seeded and chopped
  • 1 white onion, finely chopped
  • 2 scallions, chopped (whites/greens separated)
  • 2 cloves garlic, crushed
  • 11/2 tsp of black salt (adjust according to preference for the eggy taste)
  • pinch of turmeric (for the color)
  • 1/2 cup dairy free cheddar (optional, but a great addition)
  • salt & pepper, to taste .

Preparation

  1. Heat oil (if using), in a non-stick skillet (preferably a cast iron one) over medium-high heat

  2. If you are not using oil, add the chopped onions, jalapeño, garlic to the skillet directly3️⃣season with salt (use sparingly as you will be adding black salt & dairy free cheddar), pepper, and cook, stirring constantly until soft, about 5 minutes,

  3. Add scallion whites & spinach & cook for 4 min on medium-high

  4. Once the spinach leaves have wilted, stir in the chopped tofu

  5. Season with black salt (about 1 1/2 tsp), turmeric, nutritional yeast & cook for 10 min, stirring often

  6. Reduce heat, add cheddar (if using) & stir until it has melted

  7. Check for seasoning & top with scallion greens

  8. Make sandwiches with toasted bread, scrambled tofu, tomatoes & hot sauce

  9. Use any variety of bread that you have

  10. Highly recommend sourdough slices

  11. Use any hot sauce that you have

  12. Sriracha works really well
