Chia Pudding Parfait with Mango and Granola
Ingredients
Chia pudding
- 1 cup coconut milk
- 1/4 cup chia seeds
- 1 tablespoon maple syrup
- 2 tablespoons coconut yogurt
Mango lassi
- 1.5 mangoes
- 200 ml coconut yogurt
Additional parfait
- popped amaranth
- coconut yogurt
- granola
- figs
Preparation
Prepare chia pudding: Mix chia seeds with coconut milk, maple syrup, and coconut yogurt. Refrigerate for at least 2 hours until thickened.
Prepare mango lassi: Blend mangoes and coconut yogurt until smooth.
Assemble the parfait: Layer the chia pudding, mango lassi, popped amaranth, coconut yogurt, granola, and figs in a jar or glass.
