Chia Pudding Parfait with Mango and Granola

Ingredients

Chia pudding

  • 1 cup coconut milk
  • 1/4 cup chia seeds
  • 1 tablespoon maple syrup
  • 2 tablespoons coconut yogurt

Mango lassi

  • 1.5 mangoes
  • 200 ml coconut yogurt

Additional parfait

  • popped amaranth
  • coconut yogurt
  • granola
  • figs

Preparation

  1. Prepare chia pudding: Mix chia seeds with coconut milk, maple syrup, and coconut yogurt. Refrigerate for at least 2 hours until thickened.

  2. Prepare mango lassi: Blend mangoes and coconut yogurt until smooth.

  3. Assemble the parfait: Layer the chia pudding, mango lassi, popped amaranth, coconut yogurt, granola, and figs in a jar or glass.
