Chocolate Zucchini Loaf

Ingredients

  • 2 cups shredded zucchini
  • 1/2 cup melted coconut oil
  • 1 cup packed brown sugar
  • 1/2 cup non-dairy milk
  • 1 teaspoon vanilla
  • 2 flax eggs
  • 1 teaspoon apple cider vinegar
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 cup cacao powder
  • A pinch of salt
  • 1/4 cup non-dairy chocolate chips

Optional icing

  • 1/2 cup powdered sugar
  • 1 tablespoon non-dairy milk
  • 1/2 teaspoon vanilla extract

Preparation

  1. Preheat oven to 350 degrees F

  2. Prepare flax eggs by mixing 2 tablespoons ground flax seeds with 2 tablespoons water and letting rest for 5 minutes

  3. Start by mixing together coconut oil, brown sugar, vanilla, milk, flax eggs, vinegar and zucchini.

  4. Sift in flour, baking powder, baking soda, cacao powder, salt and mix until combined.

  5. Fold in chocolate chips and pour into a greased loaf pan.

  6. Bake in a pre-heated oven at 350 degrees F for 1 hour and 10 minutes.

Icing

  1. Combine all ingredients, mix well and drizzle over cooled loaf.
