Cold Potato Salad with Dill Sauce

Ingredients

  • 4 medium spice potatoes
  • 1/2 red onion
  • 2 dl chickpeas
  • 2 stems of spring onion

Dill sauce

  • 1 dl cashews
  • 1 date
  • Handful of fresh dill
  • 1 tbsp lemon juice
  • 1 dl water
  • Salt and pepper

Preparation

  1. Cook the potatoes for around 20 minutes until they are done.

  2. Chop the potatoes into chunks and add them to a bowl along with chickpeas and chopped red onion and spring onion.

  3. Soak the cashews for 10 minutes.

  4. Add the cashews to a blender along with the date, fresh dill, lemon juice, water, salt, and pepper, and blend until creamy and smooth.

  5. Pour the sauce over the potato mixture and stir carefully to combine.

  6. Serve with extra dill on top.

  1. This recipe is mayo-free and uses cashews for a creamy sauce that is sweet and full of dill flavor.
