Copycat Panera Mediterranean Grain Bowl

Ingredients

  • 1 1/4 cup frozen brown rice/quinoa mix
  • 2 chicken breasts
  • 1/4 cup hummus
  • 1 cucumber
  • 1/2 cup grape tomato
  • 1/4 cup kalamata olives
  • 2 cups arugula
  • 1/4 cup feta
  • 1/4 cup greek yogurt
  • juice of 1 lemon
  • salt/pepper/garlic/oregano to taste

Preparation

  1. Warm rice according to package

  2. Bake chicken with spices of choice at 400 degrees for 20-25 minutes

  3. Assemble bowls by mixing rice and arugula with lemon and spices, then top with veggies, feta and dollops of yogurt and hummus
