Copycat Panera Mediterranean Grain Bowl
Ingredients
- 1 1/4 cup frozen brown rice/quinoa mix
- 2 chicken breasts
- 1/4 cup hummus
- 1 cucumber
- 1/2 cup grape tomato
- 1/4 cup kalamata olives
- 2 cups arugula
- 1/4 cup feta
- 1/4 cup greek yogurt
- juice of 1 lemon
- salt/pepper/garlic/oregano to taste
Preparation
Warm rice according to package
Bake chicken with spices of choice at 400 degrees for 20-25 minutes
Assemble bowls by mixing rice and arugula with lemon and spices, then top with veggies, feta and dollops of yogurt and hummus
