Creamy Salmon Pasta with Yoghurt and Peas
Ingredients
- Pasta
- Salmon fillets
- Oil
- Mushrooms
- Spring onions (optional)
- Peas
- 150g natural or Greek yoghurt
- 1 tablespoon lemon juice
- Chopped parsley
- Black pepper
Preparation
Cook the pasta.
Place salmon fillets skin side down in a non-stick pan and cook for a few minutes on each side, then remove to a plate.
Add a little oil to the pan and cook the mushrooms and spring onions if desired. Add peas and flake the salmon back into the pan.
Remove from heat and stir in 150g natural or Greek yoghurt, 1 tablespoon lemon juice, chopped parsley, and black pepper.
Mix into the pasta and serve.
